Quick and Easy Cucumber Salad
Ingredients:
3 medium sized cucumbers
1 cup of plain low-fat yogurt
1 tablespoon of fresh lemon juice
1 teaspoon of ground cumin
1 teaspoon of dried mint leaves
Instructions:
Peel the cucumbers and slice them in half. Discard the seeds and slice the cucumber thinly. Mix remaining ingredients together in a large bowl. Add the cucumbers and stir together. Refrigerate for one hOur. Serve.

Light Macaroni and Cheese
Ingredients:
Cooking spray
2 cups of elbow macaroni, cooked
3/4 cup of shredded low-fat cheddar cheese
2 tablespoons grated Parmesan cheese
1/2 cup skim milk
1 tablespoon of dried parsley
1 tablespoon of Worcestershire sauce
1 teaspoon of garlic powder
1/2 teaspoon of mustard powder
1/2 teaspoon of black pepper
Instructions:
Preheat your oven to 350 degrees. Coat a 1 1/2-quart casserole dish with nonstick cooking spray. Add the macaroni, cheese, milk, parsley, Worcestershire sauce, garlic powder, mustard, and pepper. Mix it well and smooth the top of the mixture. Bake until the top is golden brown (about 40 minutes).
