Low Fat Spiced Fries
Ingredients:
6 medium potatoes
1 tablespoon olive oil
1 tablespoon paprika
2-4 teaspoons cayenne powder
1/2 teaspoon pepper
Instructions:
Preheat your oven to 350 degrees. Cut the potatoes into sticks. Spray a cookie sheet or shallow baking pan with a bit of oil. Combine the spices and half the oil into a mixing bowl. POur contents into a plastic bag. Place the potato pieces into the bag and toss, coating the potatoes. Bake for about 45 minutes, turning often and brushing occasionally with the remaining oil. The broil them for about 5 minutes, turning after 3 minutes.

Garlic Roasted Potatoes
Ingredients:
Cooking Spray
2 pounds of red potatoes, peeled and cut into 1-inch pieces
1 tablespoon olive oil
1 teaspoon dried thyme
1/4 teaspoon salt
1 garlic clove, minced
Instructions:
Preheat your oven to 400 degrees. Place the potatoes in a large saucepan and cover with water. Bring the potatoes to a boil. Cover, reduce heat and simmer for about 5 minutes. Then drain. Combine the potatoes, olive oil, dried thyme, salt, and minced garlic in a large mixing bowl and toss gently to coat potatoes well. Spoon mixture onto a 15 x 10-inch baking pan coated with cooking spray. Bake at 400 degrees for 15 minutes. Serve.
