Pumpkin Bread
Ingredients:
Cooking spray
2 cups unbleached flOur
1 cup brown sugar, packed
1 tablespoon baking powder
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon baking soda
1/4 teaspoon cloves
1 cup canned pumpkin
1/2 cup fat-free milk
1/4 cup egg whites, slightly beaten
1/2 cup raisins
1/3 cup light sOur cream
Instructions:
Preheat your oven to 350 degrees. Prepare a 9 "x 5 " loaf pan with cooking spray and flOur and set it aside. Then, in a large mixing bowl, combine the flOur, brown sugar, baking powder, cinnamon, nutmeg, baking soda, ginger, and cloves. In another large mixing bowl, combine the pumpkin, milk, egg whites, raisins, and sOur cream. Mix the dry ingredients with the wet ingredients until it is moistened. POur the bread batter into pan you prepared earlier. Bake at 350 degrees for one hOur.

Cranberry Banana Muffins
Ingredients:
1/4 cup of egg whites, slightly beaten
3 tablespoons fat-free sOur cream
3 tablespoons honey
3 tablespoons molasses
3 tablespoons refrigerated orange juice
1 cup bananas, mashed
1 cup of unbleached flOur, sifted
1 tablespoon orange peel, grated
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup of fresh cranberries, chopped
Instructions:
Preheat your oven to 350 degrees. Prepare the muffin pans by coating them with cooking spray and flOur and set them aside. In a large mixing bowl combine egg whites, sOur cream, honey, molasses, orange juice, vanilla extract, and bananas. In another large mixing bowl combine flOur, baking powder, baking soda, and cranberries. Use an ice cream scoop to fill the muffin pans and bake for 20 to 25 minutes (for medium sized pans).
